Chicken casserole:

Boil 3-4 chicken breasts and shred when cool. In a casserole dish, mix in 1/2 cup low fat mayo and 1 can of cream of mushroom or cream of chicken soup. Add 2 bags of boil in a bag rice. Add sliced, cooked broccoli and bake for 350 degrees for 45 minutes. Sprinkle shredded cheddar on top.
Great make ahead dish.

    I've done this, but adding the veggie is a great idea. Never thought of that. It is an easy good tasting meal. I use whole milk, I am so bad. But I've made this dish for many years. Good recipe!

    Great recipe! I love adding more veggies- I tend to graze.... I added chinese cabbage to this and snow peas and it was delicious!
